Ingredients:
250g flour
100g VGrains
1 teaspoon baking powder
220g butter
125g brown sugar
125g caster sugar
2 eggs
½ teaspoon salt
Vanilla
2 cups shredded coconut
Methods:
1. Stir butter and sugar until they are light and fluffy.
2. Add in eggs and vanilla and mix well.
3. Add in all dry ingredients to the mixture and beat it until becoming a dough. Add a cup of shredded coconut into the dough.
4. Pour one cup of shredded coconut on the tray.
5. Roll the dough on the tray to your desired thickness. Bake at 170c for 10 to 12 minutes.
